The Perfect Fish-less Jackfruit in Batter

Hi Friends and welcome once again in my kitchen! So, today we will be making perfect fishless fish patties in batter! For this recipe we will be using one favorite ingredient. Jackfruit! Jackfruit is a fruit (obviously) which comes from India. It is tasteless and has a meaty like texture, and is perfect for recipes like this one! Just make sure to get the green ones in water or brine and not in syrup cause you don’t want your vegan fish to taste like dessert! lol. For the fishy taste we will be using nori sheets which you can find at your local grocery store. You can add as much as you want for a mild or super fishy taste.

Delicious, fishless fish patties in a perfect batter!

Ingredients

  • 1 1/2 nor sheet shredded

  • 1 can jackfuit (290 gr)

  • 2 tbsp sweet relish

  • 1 tbsp vegan burger sauce*

  • 1 tsp salt

  • 1 tsp coconut sugar

  • 2 tbsp vital wheat gluten

  • For the batter
  • 1 spring onion

  • 1 cup all purpose flour

  • 1 cup beer

  • 1 tsp salt

  • Black pepper to taste

Directions

  • Add the shredded nori in a food processor and pulse until it breaks down to almost powder.
  • Drain and rinse the jackfruit. Add it in a food processor and process and until it breaks down to smaller pieces. Don’t over do it. You still want some shredded fiber like texture.
  • In a bowl add the jackfruit, the nori powder and all the remaining ingredients and stir to combine. Kneed with your hands for a few minutes, form small patties and leave aside while you prepare the batter.
  • Finely chop the spring onion. In a bowl add all the ingredients and stir to combine.
  • In a pan over medium to high heat add some vegetable oil. Once hot dip the patties in the batter and fry until golden brown (about 4 minutes from each side). When ready remove from pan and leave on a ktchen paper to absorve the excess oil.
  • Serve while warm with some mashed potatoes!

Notes

  • You can make your own burger sauce. In a small bowl add 3 tbsp vegan mayo, 2 tsp mustard, 2 tsp parika, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp apple cider vinegar a stir to combine.
  • For a fishier taste add 1/2 nori sheet more.
