Hi friends and welcome! I’m Konstantinos and I live outside of Thessaloniki (that’s in Greece). I love going to the movies, reading books and I can’t live without music! I also love food! Basically I’m a huge food lover! I have been vegan for about 13 years. And you might be wondering what could possibly a vegan be eating to love food so much? Quinua and Lettuce? Well, I won’t lie to you. I do eat lettuce and I love quinua! But that’s not just it! You see, before going vegan Ι used to eat in one meal 3 burgers with fries, 2 gyros in pita bread, plus dessert. And with these anything else I could get my hands on! So I had to do something to veganise all my favorite dishes!

What happened?

Back in 2007 – 2008 I had some severe skin issues. When I’m talking severe I mean l 5-months-with-3- hours-tops-of-sleep-due-to-itching severe. After I went to 7 different dermatologists, phsychologists, witches and gurus with no results, a friend of mine suggested I used try a plantbased diet. I wasn’t exactly happy about it. And I was like… “A week? Would that be ok?” To be honest I had nothing to loose and I was kinda desperate. So I did! The results? 2 months later no itciness! Oh yes! I couldn’t believe it either! So decided to continue for a little while. Another 2 months and I lost about 24 kilos. I was definetely going to keep this lifestyle!

And what happened next?

Some years past and veganism took a very different turn for me. It wasn’t just about me anymore. One night I watched Earthlings and in less than two hours my entire percetion of what is food, life and justice changed. About 2 – 3 documentaries later I realised that I had to become the best version of me possible. Besides Earthlings, if you are interested you could also watch Cowspiracy and Dominion. I can guarantee you that you will start to see things a bit different.

When is the yummy food coming?

Until that point I used to eat a lot of veggies, fruits, nuts and some times when I felt like it pita bread with some fries. In other words I used to make a quie healthy diet. But don’t forget that I used to love junk food, so I had to do something! This was it! I entered the kitchen and started experimenting with all these new ingredients and recipes. After a while I came to realise that I didn’t need to give up on all my favorite dishes. That I didn’t need to spend my life eating just lettuce! Everything could be veganised! I could invite over friends for dinner! Yay!

My new creations weren’t just super delicious and filling but after I got the hand of it they were also very easy to make! And the best part of it all was that I came to love cooking. Though I learned from a very young age to cook at some point I got bored of it and didn’t want to go inside a kitchen! That all changed. And this is where this blog comes in the picture. My love and passion for vegan cooking made me want to share all that I have learned in the process. And so I thought of giving it a go!
