Hi friends! Hope you are all doing great! So, for today I thought we would be making one of my favorie recipes! This scrumptious, filling and oh-so-yummy pulled jackfruit bbq sandwich was my go to when I wanted to impress my friends a while back! I can guarantee you that everybody loves it and I’m sure you will too! Vegan, easy to make, super delicious! What more can yu ask for! Give it a try and let me know what you think!
PULLED JACKFRUIT BBQ SANDWICH

hourThis vegan pulled jackfryut sandwich will def be a favorite! Easy to make, scrumptious and filling!
Ingredients
2 tbsp olive oil
1 onion cut in thin slices
1 can jackfruit (young green n brine)
1 tsp garlic powder
1 tsp sweet parika
1 tsp smoked paprika
1/2 tsp cumin
1 tsp liquid smoke*
1 pinch cayenne pepper
1 tsp salt
Black pepper to taste
2 cups vegetable broth
1 tsp brown sugar
1/2 cup barbeque sauce + extra for serving
2 burger buns
4 – 6 tbsp vegan coleslaw
- For the coleslaw
450 gr white cabbage
450 gr red cabbage
3 carrots (graded)
1/2 cup finely chopped parsley
200 gr vegan mayonnaise
150 gr plain soy yogurt
3 tbsp apple cider vinegar
3 tbsp mustard
1 1/2 tsp salt
1/2 tsp black pepper
Directions
- Pre heat oven at 200°C.
- Rinse, wash and strain the jackfruit very well. Cut each piece in smaller bites following the jackfruit “fibers”.
- In a pan over medium heat add the olive oil. Once hot throw in the onion and saute until translucent. Add the jackfruit, following with all the spices and stir.
- Add the vegetable broth, cover and cook for about 10 minutes or until the jackfruit is soft. Add the sugar and cook for 5 more minutes.
- Using a potato masher or a fork mash the jackruit into pulled like texture. Leave the pan uncovered to cook for anither 2 minutes or until all liquids are gone.
- Line a baking tray with parchment paper. Empty the jackfruit in the tray. and bake for 25 minutes. Take the tray out of the oven, add the barbeque sauce over the jackfruit and stir to combine. Returne to the oven and bake for another 10 minutes or until some edges start to brown.
- Cut your burger bunns in halves. On the bottom halve add a couple of spoons jackfruit and add a bit mor bbq sauce. Top with 2 – 3 tbsp coleslaw and cover with the other half of the bun. Enjoy!
- For the coleslaw
- Cut the cabbages into thin shredds and add it innto a bowl. Add the shredded carrot and the parsley and give it a stir.
- In a second bowl add the rest of the ingredients and mix until well combined.
- Pour the mayo mixture over the cabbage and stir until inorporated.
Notes
- Instead of liquid smoke you can also add about 1/2 tsp more of the smoked paprika
