Hi friends! So today we will be digging into one more delicious Greek recipe (veganised of course). This scrumptious vegan stew is one of my favorite greek comfort foods! Meaty, hearty, delicious and filling! Serve it with some mashed potatoes or rice and I’m sure you will love it!
DELICIOUS SOY CHUNKS STEW

Ingredients
150 gr soy chunks (dry)
1 vegetable bouillon cub
3 + 3 tbsp olive oil
1 onion chopped
1 garlic clove finely chopped
1 carrot cubbed
1/3 cup dry red wine
1 1/2 tbsp tomato paste
1 cup tomato sauce
1 cup water
2 tsp molasses
1 tsp salt
1/4 tsp all spice
1/4 tsp clove
Black pepper to taste
2 bay leaves
1/4 tsp cinnamon
Directions
- Dissolve the vegetable bouillon cub in 1 lt water and soak in there the soy chunks foe about 15 minutes or until soft. Drain the soy using your hands (be careful not to burn yoourself).
- In a pan over high heat add the 3 tbsp olive oil. Once warm add the soy chunks and saute util golden and crisp. Take he chunks out of the pan and leave aside. Lower heat to medium and add the rest 3 tbsp olive oil in the pan and once hot add the onions and the carrots. Saute until the onions are translucent. Add the garlic and saute another 2 minutes.
- Pour in the wine and once the alcohol evaporates (about 4 minutes) add the tomato paste and saute for another 3 minutes.
- Next add teh tomato sauce and the water along with all the rest of the ingredients except fot the cinnamon and stir. Once it starts to boil lower heat, cover and let simmer for about 5 minutes.
- Add cinnamon and the soy chunks. Stir and let simmer for another 3 minutes.
Notes
- Serve with rice or mashed potatoes.
