Delicious and Super Easy Baked Potatoes with Curry

Who doesn’t love potatoes? Let me see hands! I sure do! And this recipe is probably one of my favorites! Simple yet delicious, filling and hearty! Crunchy potatoes, combined with curry and spices and a simple soy yogurt sauce which you will absolutely love! The perfect side for your bean patties or seitan steak! Spicy potatoes with curry! A delicious side with the easiest and most delicious sauce!

Ingredients

  • The potatoes
  • 4 – 5 potatoes

  • 4 tbsp sesame oil

  • 1 tsp salt

  • 1 tbsp curry powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp sweet paprika powder

  • Black pepper

  • 1/3 cup bread crumbs

  • The sauce
  • 75 gr soy yogurt

  • 75 gr vegan mayonnaise

  • 1 tsp curry powder

  • 1 garlic clove minced

  • 1/2 tsp salt

Directions

  • The potatoes
  • Peel the potatoes, wash them and cut them in wedges. Fold them in a kitchen towl and pat dry them. Leave them in the towel for about 30 minutes. Preheat oven at 200°C.
  • In a bowl add the potatoes, the spices, the bread crubs and mix well. Line a baking tray with parchment paper. Add the the potatoes in your tray and bake for about 55 minutes or until crispy and golden
  • The sauce
  • Add all the ingredients in a bowl and stir to combine.

Notes

  • You can also chop an oion and add it with your potatoes.
