Super easy vegan mayonnaise ready in less than 5 minutes! Could it happen? Of course it could! Check this recipe out and you will never have to buy store bought vegan mayonnaise again! This is the recipe that I used for my tofu nuggets the other day (see recipe HERE), and I’m pretty sure you will love it!

Rich and creamy vegan mayonnaise ready in less than 5 minutes!
Ingredients
100 ml soy milk
1 tsp mustard
2 tsp lemon juice (freshly squeezed)
1/2 tsp salt
1/2 tsp coconut sugar or brown sugar
1/2 tsp apple cider vinegar
150 sunflower oil
Directions
- In a blender add all the ingredients except for the sunflower oil. Start blending in low speed.
- While blending start pouring very slowly in the blender the sunflower oil. The key is to do as slow as possible this should take you about 3 to 4 mnutes. At some point you mixture should start to thicken up.
- Once you have added all the sunflower oil and the mayo has thicken up turn the speed up for a few seconds. Your vegan mayonnaise is ready!
Notes
- Store in an air tight container and in your fridge for 5 days.
- If your mayonnaise doesn’t thicken add about 20 ml more sunflower oil.
- If at fisrt it seems to you that this will never turn into mayonnaise please be patient! Pour as slowly as possible the sunflower oil in the blender and you will have your mayonnaise!
